Story About US

Founder and owner, Charmaine McKenzie established CAMY’s Caribbean Mart & Eatery in 2022. Charmaine is the daughter of Jamaican born immigrants who migrated to Northeastern Ohio in the 1970s. As a young lady growing up in Cleveland Charmaine was afforded the opportunity to be exposed to Jamaican culture. Charmaine has travelled to Jamaica frequently with family and friends where she was able to enjoy island life. 

Charmaine attended college in Washington, DC where she was able to meet and interact with a culturally diverse body of students. She has a background in Healthcare and Information Technology. Charmaine brings her educational experience, cultural background and love for food together to bring the best authentic Caribbean experience to the city of Cleveland.

Recipe Of The Week

Jamaican Curry Chicken

Ingredients 

  • 2½ lbs Chicken
  • 2 tbsp Curry powder
  • 2 tbsp All-purpose or Chicken seasoning
  • 1 ½ tsp Salt Or salt to your liking
  • 5 Pimento berries (allspice)
  • 3 Cloves garlic Crushed
  • 1 Medium onion Chopped
  • 3 Sprig of fresh thyme
  • 2 Medium carrots Chopped
  • 1 Small potato Diced
  • 1 ½ tsp Freshly grated ginger
  • 1 Small scotch bonnet pepper seeds removed and findly chopped
  • 3 tbsp Cooking oil
  • Boiling water
  • 1 lime/lemon to wash the chicken
  • 1 tsp Vinegar to wash the chicken.

Instructions

  • Remove the skin (if there is any) from the chicken and cut it into small pieces. Wash the chicken in water with the juice from the lime/lemon and the vinegar. Drain away all the excess water from the chicken. 
  • In a kitchen bowl, add the chicken, onion, garlic, scotch bonnet pepper, pimento berries, ginger, salt, all-purpose seasoning, the curry powder and mix everything together and leave to marinate for 30 minutes or more.
  • In a pot add the cooking oil and put to hot on medium heat.
  • Add the seasoned chicken to the oil and stir well. Let the chicken cook until lightly brown on all sides. Don’t let the pot burn, add a tip of water if necessary.
  • Stir in the carrot, potato and thyme. Add water enough to cover the chicken in the pot. Cover and leave to cook for 25-30 minutes, until the chicken is cooked and the water is reduced to a curry gravy.

The Chef

Norma attended and graduated from culinary school in Jamaica. She served as head chef at several restaurants while in Jamaica. Norma brings her excellent culinary skills to CAMY’s Caribbean Mart & Eatery.

Maureen

Manager

Maureen served as manager in hospital Dietetics for years. She managed and oversaw food service programs. She worked to ensure that the kitchen was run in an orderly manner and that food being stored and served was always done in a safe manner. Maureen helps to manage both the retail and food services side of CAMY’s Caribbean Mart & Eatery.

Tony

Inventory

Tony manages stock and inventory and ensures that the upkeep of CAMY’s Caribbean Mart & Eatery is always up to par so that our customers will have the same welcoming experience each and every time that they come to visit.
